There are many ways of how to make lentil soup, but for sure everyone agrees that lentils are big source of protein, and rich in iron.
This super hearty soup does not need to be boring, that is why I made this recipe to help you make a flavorful and healthy soup that make your family very satisfied.
INGREDIENTS:
2 cups dry lentils
1 finely chopped onion
2 finely diced carrots
2 finely diced celery stalks
1 whole clove of garlic
1 red chili pepper
Tomato paste
8 cups vegetable broth
2 tablespoons olive oil
1 bay leaf
½ teaspoon of cumin and coriander
Salt and freshly ground black pepper to taste
STEPS:
Place olive oil in a large pot over medium heat. When hot add the diced onions, carrots, and celery and cook by stirring occasionally until the onion is tender.
Add garlic, bay leaf, cumin and coriander and stir in the lentils, then add vegetable broth and tomato paste.
Bring to a boil, then reduce heat to low and simmer for about 1 hour or until lentils are tender (cooking time may vary depending on the type of lentils)
Season to taste with salt and freshly ground pepper.
