BULGUR WHEAT SALAD WITH RAISINS & TOASTED ALMONDS

This flavorful salad is so quick to make on hot summer days when you do not want to spend hours in the kitchen, but I usually make it as a healthy side dish. You can serve this dish with Merguez sausage to have a complete meal.

INGREDIENTS:

1 cup uncooked bulgur wheat

1 cup boiling water

3 tablespoons fresh lemon juice

2 tablespoons extra-virgin olive oil

½ cup golden raisins soaked in warm water

½ cup toasted shaved almonds

1 cup chopped fresh parsley

1/4 cup chopped fresh mint

Salt & freshly ground black pepper to taste

STEPS:

In large mixing bowl, combine bulgur wheat and boiling water, cover very well and let sit for about 30 to 40 minutes or until tender.

Then combine the bulgur wheat with drained golden raisins, chopped parsley, mint, olive oil, lemon juice and toasted shaved almonds then season with salt and pepper, stir the mixture very well.
