CAPRESE BRUSCHETTA

Make this Italian classic on toasted country style bread and here you have an easy snack or appetizer. I usually use rich and creamy mozzarella such as mozzarella di Buffalo.

INGREDIENTS:

4 slices country-style bread

Mozzarella di Buffalo

1/2 clove of garlic

1/3 pound of cherry tomatoes

Extra virgin olive oil

Balsamic vinegar

Salt and pepper

STEPS:

Brush the sliced bread with olive oil and toast on both sides under the broiler.
Rub the toasted bread with garlic while they are still hot.
Arrange the mozzarella cheese on the bread and the cherry tomatoes.
Season the bruschetta with salt, pepper, and drizzle of olive oil and drops of balsamic vinegar.
Garnish with basil leaves.
