CAST-IRON ROASTED CORNISH HEN
I like simplicity on the table, and there is nothing as simple as roasted chicken.
I prefer the flavor of organic chicken or free range; nowadays it is very convenient and accessible to find high quality chickens at your grocery store. All you need is salt and pepper and olive oil for seasoning.
INGREDIENTS:
1 Cornish hen
Olive oil
Salt and freshly ground pepper to taste
Stuffing (optional): 1 lemon, ½ onion, 2 cloves of garlic, sage, bay leaf, thyme, cilantro and tarragon.
STEPS:
Preheat oven to 350 degrees F.
Season the Cornish hen very well with salt and freshly ground pepper and drizzle of olive oil making sure you season inside as well.
I usually stuff the hen with herbs, lemon, garlic, bay leaf and piece of onion.
Place the hen on cast iron pan and roast for about 1 hour 15 minutes until golden brown and cooked through, the thermometer should registers 165° in the thickest part.
