MAKE THIS AMAZING CHICKEN WITH HERBS AND CITRUS

The key ingredient in this amazing dish is the different kinds of citrus such as lemon, orange, lime and grapefruits. They add rich citrusy sweet taste to the dish as well as the herbs adds nice full aroma to balance the flavor. This aromatic dish can boost your immune system during the cold weather.

INGREDIENTS:

3 Chicken thighs

½ lemon thinly sliced

½ orange thinly sliced

½ lime thinly sliced

1/e grapefruit thinly sliced

2-tablespoon olive oil

1 small yellow onion chopped

2 cloves of garlic chopped

3 tablespoon of white wine

Herbs: Rosemary, thyme, sage, marjoram, bay leaves

Salt & freshly ground pepper

STEPS:

Heat oil in iron cast pan over medium high heat.

Dry the chicken with paper towel and season with salt and pepper, then start searing the chicken on all sides until golden brown.

When the chicken is well browned set a side.

In the same pan, add the chopped onion and cook until translucent, then add the chopped garlic stir cook for about 2 minutes, to loosen the cooking residue add white wine then herbs and let cook for about 2 to 3 minutes, add the sliced citrus, the seared chicken to the pan, and season with salt and pepper.

Cook the chicken slowly in low heat about 30 minutes or until it is tender at the pricking of a knife. Make sure to turn the chicken while cooking, and if the cooking liquid is dried up add more water as needed.
