CLASSIC CRISPY FRIED ARTICHOKES

This recipe of fried artichokes makes best appetizer. Following the classic steps; dipped in seasoned flour, beaten eggs, coated with breadcrumbs and fried to perfection in vegetable oil served with aioli dip.

The important tip for preparation is that the artichokes should be cut to small pieces and be put in a bowl of water with a good squeeze of lemon juice to prevent them from oxidizing and turning brown.

INGREDIENTS:

4 Artichokes

Flour

Salt to taste

1 egg white

Lemon juice

Bread crumbs

Vegetable oil for frying

Cleaning Artichokes:

Remove dark tough exterior leaves from artichokes. Trim stems and cut top one-third off of artichokes, then cut into quarters, then in halves again, put artichokes into lemon water.

STEPS:

Combine flour and salt in a large bow. Whisk egg in bowl

Stir lemon juice into a large bowl of water

Pour vegetable oil into a deep pot and heat over medium-high heat until hot or when thermometer should registers 375°.

Dip artichokes in flour, then eggs then breadcrumbs and deep-fry until crisp and golden brown, about 3 minutes.

Transfer artichokes to paper towels to drain, and season to taste with salt.

Serve with aioli sauce.
