CLASSIC POTATOES DARPHIN
These Hash browns look a like recipe is a French potato classic. It is large pancakes made by potatoes cut to julienne. Unlike the classic latke Potatoes Darphine has no onion but it is delicious.
INGREDIENTS:
1 pound russet potato peeled and cut to julienne
Salt and freshly ground pepper to taste
3 ounces butter
Vegetable oil for frying
STEPS:
Preheat the oven to 450F
Use the mandolin to cut the potatoes to julienne and place on paper towel and dry them very well and season with salt and pepper.
Over medium high heat, add enough oil to a sauté pan when hot add the potatoes making a layer about 1 inch thick make sure to make an even layer using your wooden spatula.
Cook until the bottom is golden brown, before flipping the cake; make sure to drain excess butter.
Finish the cooking in the oven until top is crisp and golden brown.
Serve hot.
