FRESH BRUSCHETTA
Whenever I am craving a quick fresh bite; I love it when I have a rustic country style bread, or a warm French baguette.
INGREDIENTS:
2 medium tomatoes seeded and diced
1 sliced baguette or rustic bread toasted
1 clove of garlic
6 basil leaves
3 tablespoons olive oil
Salt and freshly ground pepper
STEPS:
Place the diced tomatoes and the basil leaves torn to small pieces in large bowl and season to taste with salt, pepper and olive oil.
Brush the sliced bread with olive oil and grill or toast until golden brown on both sides, and then rub the toasted bread with the garlic before adding the tomato.
