FRESH RICOTTA WITH HERBS
Fresh ricotta with herbs is one of my wife’s favorites dishes; she always orders it whenever we eat outside in our local Italian restaurant. As simple as it is, it tastes so good.
I find out that the secret of this dish is that the restaurant toasts their bread in their imported wood fired pizza oven. I find out that you do not need a special oven since I toast mine in grilled pan and they turn out amazing.
INGREDIENTS:
½ pound fresh ricotta
2 tablespoon of extra virgin olive oil
Pinch of salt, freshly ground pepper
1 Sprig of thyme, ½ tablespoon chopped parsley, ½ tablespoon thinly sliced chives, ½ tablespoon chopped cilantro, and ½ tablespoon chopped marjoram.
STEPS:
In mixing bowl, whip the fresh ricotta with the rest of the ingredients very well until well blended.
Serve with warm grilled country bread brushed with extra virgin olive oil.
