I like to keep my recipes fairly simple and easy without sacrificing the flavors and tastes.
Belgium endives are expensive lettuce and some may find them a little bit tasteless. That is why; I like grilling them, which adds a character and smoky flavor.
I choose the balsamic vinegar because of its sweetness and its acidy aroma, which fit perfectly this dish.
INGREDIENTS:
½ pound Belgium endives washed and cut in halves lengthwise
1-tablespoon extra virgin olive oil
1-tablespoon balsamic vinegar
Salt and freshly ground black pepper to taste
STEPS:
First, heat the outdoor grill to high heat or stovetop grill.
Meanwhile, trim the bottom of the endives and cut them in halves lengthwise. Then, season the cut sides with salt and freshly ground black pepper then drizzle with olive oil.
Next, start grilling the endives the inside down until charred and tender about 2 to 3 minutes each side.
Serve hot with drizzle of olive oil and balsamic vinegar.
