GRILLED THINLY SLICED ARTICHOKES
I like the flavor of grilling artichokes, it is an appetizer that has stick in my mind the time I visited Ibiza Island in Spain with my dearest friend and cordon blue chef Khalid.
Thinly sliced artichokes hearts grilled and dressed with lemon vinaigrette; it sounds simple but you will be amazed with the great flavor.
INGREDIENTS:
3 Artichokes
Lemon juice
Extra virgin live oil
Salt
Chopped parsley
Cleaning Artichokes:
Remove dark tough exterior leaves from artichokes. Trim stems and cut top one-third off of artichokes, then cut into halves, using teaspoon start scooping out the hairy chokes inside. Put artichokes into lemon water.
Lemon Vinaigrette:
In Medium bowl, combine lemon juice, olive oil and salt then whisk all the ingredients until well blended.
STEPS:
Using mandoline start slicing the artichokes lengthwise (Make sure you use food handler to protect your fingers).
Prepare your grill for high heat.
Grill on both sides until brown or nice grill mark on the artichokes
Dress the artichokes with lemon vinaigrette and garnish with chopped parsley.
