HERB-ROASTED WHOLE BRANZINO

My favorite Mediterranean fish is the wild caught Branzino or European sea bass; it is delicate white flesh with mild flavor.

As there are many ways to cook the Branzino such as grilled, seared, oven baked, braised or even salt crusted, all you may need is salt, freshly ground pepper, drizzle of olive oil and sliced lemon to make the perfect Branzino dish. I will include many different Branzino recipes in this blog that everyone can enjoy.

INGREDIENTS:

2 medium Branzino

½ lemon sliced

½ orange sliced

Fresh thyme sprigs, parsley leaves, marjoram, fennel leaves, rosemary sprigs, oregano, celery leaves

1 clove of garlic thinly sliced

Salt/freshly ground pepper to taste

2 tablespoons extra virgin olive oil

STEPS:

Preheat oven to 375 degree F.

Clean and scale the Branzino and make sure to keep the heads.

Stuff the inside fish with thyme, sliced lemon and orange.

Place the fish into baking pan and season the fish inside and out as well as both sides with salt and pepper and drizzle of olive oil. Add the thinly sliced garlic and all the fresh herbs.

Bake for about 20 to 25 minutes or until cooked through.

Serve with a drizzle with extra virgin olive oil.

As a side dish, I placed sliced tomatoes and thinly slice potatoes underneath the Branzino.
