HOW TO MAKE A DELICIOUS MOROCCAN CHICKEN WITH PRUNES & ONIONS

I like cooking chicken as there are dozens of way to cook it, it can be baked, broiled, grilled, sautéed, roasted, seared or for slow cooked such as in stews or casseroles. This chicken recipe with prunes and onions makes an impressive dish.

The chicken pieces are seared golden brown for a crispy skin then cooked with all the spices. The prunes and the onions add a good flavor balance to the dish. This easy recipe is healthy, inexpensive and will appeal to everyone in your family.

INGREDIENTS:

1 small whole chicken , cut into pieces

Prunes

2 medium red onions sliced

3 garlic cloves

1 stick Cinnamon

3 tablespoons olive oil

1 teaspoon each of ginger, coriander, cumin

1 red chili pepper

Kosher salt and freshly ground pepper

1 bay leaf

1 cup water

Sesame seeds for garnish (optional)

STEPS:

First of all, pat dry the chicken with paper towel and start seasoning with salt and pepper.

Heat a drizzle of olive oil in large cast iron pan over medium high heat, then start searing the chicken skin-side down until golden brown for about 6 minutes.

Set the chicken aside then add the the sliced red onion and garlic to cast iron and cook till soft.

Finally, return the chicken pieces to the cast iron, add the spices, bay leaf, water and the prunes and bring to a simmer over medium heat until the chicken is cooked through about 20 minutes or until the thermometer registers 165 degrees F.

Serve hot and garnish with sesame seeds.
