Dried Fava beans have a nutty and buttery flavor; it is hearty and full of protein. This healthy popular Moroccan soup is the easiest soup recipe I have ever made, it requires no prep at all, and so you skip the cutting, the blending or puréeing; of course It is easy but it is extra delicious.
I am sure you will like it as it is warming and it is perfect soup for the cold season.
INGREDIENTS:
½ pound dried fava beans
1 cloves of garlic chopped
1 tablespoon each of cumin and paprika
2 tablespoons olive oil
Salt to taste
STEPS:
Wash the fava beans very well under cold water.
In deep pan, over medium high heat, sauté the garlic in olive oil until soft, then add the fava beans and cover with water and bring to a boil.
Add salt, olive oil, the cumin and paprika, lower heat and let simmer for about 35 minutes as the water cooks off, add more water so that it just covers the beans. Cook till the fava beans are smooth with no lumps and upon reaching the desired thickness.
Garnish with generous drizzles of olive oil, and sprinkle with cumin and paprika.
