MARINATED GOAT CHEESE
Spring is the best time to enjoy the smooth flavor of the goat cheese. So I made this simple marinade, which will take your ordinary goat cheese to the next level. Perfect for your spring picnics and or just adding it to your salads, sandwiches and toasts.
INGREDIENTS:
8 oz. fresh goat cheese
1 cup of olive oil
1-tablespoon black and red peppercorns
½ tablespoon each of fresh thyme, fresh rosemary, fresh chives
Pinch red chili flakes (optional)
½ clove of garlic thinly sliced and ½ crushed
1 strip of lemon skin
1 Bay leaf
STEPS:
Slice the goat cheese into rounds about ½ inch thick and place into a glass container or a jar.
Combine all ingredients in a bowl and stir until well mixed.
Pour the mixture to cover the goat cheese completely. Cover the jar very well, then refrigerate for at least 6 hours.
