This effortless and whole nourishing recipe will be one of your favorites too. A classic juicy and crisp skinned chicken served with fresh vegetables and aromatic herbs such as thyme and bay leaf can be made in short time. I like to use the chicken drumsticks on this recipe as the most of the time they are juicy and easy to cook. Besides, I figured out adding the white wine will enhance the flavor more.
INGREDIENTS:
1 pound organic chicken drumstick
2 tablespoons olive oil
1 cup water (chicken broth)
½ red onion, cut in quarters
1 red and green sweet peppers, seeded and sliced
1/3 lb. cherry tomato
1 Carrots peeled and quartered long sides
1 Potato peeled and cut in 1/2 inch pieces
¼ cup dry white wine
1 lemon quartered
1 sprig fresh thyme, 1 bay leaf, 1 clove of garlic and 2 hot chili pepper
Salt and freshly ground black pepper
STEPS:
Dry the chicken drumsticks with paper towel and season with salt, freshly ground pepper and drizzle of olive oil.
In medium high heat, In cast iron pan start searing the chicken until having a crisp and golden brown skin, then remove from the pan.
In the same pan, add the rest of the olive oil and start sautéing all the vegetables; red/green sweet pepper, garlic, carrots, red onion, potatoes, lemon and cherry tomatoes, then, season with salt and pepper then add the white wine, let reduce till the alcohol vaporized.
Add thyme, bay leaf, hot chili pepper and water then bring to boil reduce the heat and let simmer for about 30 minutes stirring occasionally.
