In Italy, we call the day after Easter, Pasquetta, which known as little Easter, Monday of the Angels and Easter Monday. It is a day when people enjoy Spring by heading out to the parks, the beaches, or the museums (most are open and free on this day). This Pasquetta enjoy this delicious beets hummus with Matzah or your favorite bread.
INGREDIENTS :
2 medium roasted beets peeled
1 clove of garlic
1 tablespoon of tahini
2 tablespoon of lemon juice
½ tablespoon cumin
Salt and pepper to taste
STEPS:
In a food processor or blender, add all the ingredients and start pulsing until desired consistency. Check the seasonings and chill in the fridge for about 2 hours.
