This is one of my favorite salads; it is nutritious with protein and fiber. Many flavors with the sweetness of the beets and the peach, the crunchiness of the walnuts and the softness of the goat cheese.
INGREDIENTS:
1/3 pound of red beets
2 peaches
Goat cheese
Chopped Walnuts
Dressing: 2 tablespoons of red one vinegar 4 tablespoons of olive oil
Salt and pepper to taste
STEPS:
Preheat the oven 450 degree.
Wrap the beets individually in aluminum foil. Cook for about 35 to 40 minutes, cooking time will depends on the size of the beets as I recommend checking the beets with a toothpick.
Clean the beets with paper towel while they are warm then cut the beets evenly.
Plate the beets and the sliced peach; add the goat cheese and the chopped walnuts.
Red wine vinaigrette: Wisk constantly the red wine vinegar and the olive oil, salt and pepper till well blended.
