INGREDIENTS:
1 1/2 lb. chicken
3 tablespoons unsalted butter at room temperature
Salt and freshly ground pepper to taste
3 tablespoons olive oil
2 tablespoons Extra virgin olive oil
Filling the cavity: 4 sprigs of thyme, 2 sprigs of sage, 1/2 lemon cut in half, 4 cloves of garlic crushed, 2 bay leaves, handful of parsley.
Salt and freshly ground pepper to taste
STEPS:
Preheat the oven to 375 F°.
