This crowd-pleasing recipe is perfect for family gathering during the holiday. The best thing about this recipe is that you have a delicious and affordable dish for a crowd with no prep at all. Besides, The Cornish hens cook less than regular whole chicken, so you have enough time to pick your favorite side dish.
Personally, my wife always prefers mashed potatoes when I cook chicken. For extra flavor, I stuffed the hens with lemon, sage, garlic and onion after seasoning with salt and pepper.
INGREDIENTS:
2 Small Cornish hens
2 Bay leaf
1 Lemon
Sage leaves
3 Cloves of garlic
1 White onion
Olive oil
Salt to taste
Freshly ground pepper to taste
STEPS:
Preheat the oven to 400 degrees.
Dry the hens with paper towel and start seasoning with salt and pepper ( Inside as well ) and sprinkle with olive oil.
Start stuffing the hens with whole garlic, sliced lemon, bay leaves, onion and sage.
Roast the hens in the preheated oven for about 35 minutes or until the thermometer registers 165 degree F in the thickest part of the thigh.
