PERSIMMON SALAD WITH POMEGRANATE SEEDS
Whisk together lemon juice, extra virgin olive oil, salt and freshly ground pepper. Peel and slice crosswise the orange and grapefruit. Thinly slice the apple, the radishes and the persimmon. Combine all ingredients in a serving plate and drizzle with lemon vinaigrette.
Garnish with pomegranate seeds, toasted shaved almonds and fresh mint leaves.
