Finally spring is here and the temperature starts rising up gradually. The good news for me is that I start seeing more and more of different kind of produce available in my local farmers market. I made this Radicchio salad as a transition from winter to spring; I grabbed the last pomegranates available in my farmers market which reminds me that winter is officially over.
INGREDIENTS:
1 small Radicchio leaves cleaned
1 each of orange and grapefruit cut to Supremes
1/3-pound cherry tomatoes
½ pomegranate seeded
1 thinly sliced radish
STEPS:
First, place a Radicchio leaves on each salad plate and then divide the cherry tomatoes among them, next, add the citrus supremes over the top and garnish with the pomegranate seeds and sliced radishes.
Keep the remaining citrus juices to make the dressing by mixing it with extra virgin olive oil, salt and pepper.
