RHUBARB WITH SPICED RED WINE

This recipe is one of the simplest ways to enjoy your rhubarb when they are in season, it can be a substitute for your classic rhubarb recipes such as pies and crumbles.

In this recipe the rhubarbs sweetened to perfection to balance its tartness and cooked in red wine with aromatic spices such as cardamom and anise star.

INGREDIENTS:

1-pound rhubarb cut in ½ inch pieces

1 cup of red wine

¼ cup honey

½ cup granulated sugar

2 cloves

3 cardamoms

2-anise star

½ vanilla

STEPS:

Preheat oven to 375 degrees F.

In large bowl, toss the rhubarb with sugar, the honey, the spices and stir until well coated. Then, transfer to oven-proofed pan, and add the red wine. Bake for about 14 minutes or until tender but they are still holding.
