As a child, sardines were available all year around and I grew up eating sardines two to three times a week. I recall my mother preparing them in many different ways from a simple dish with just salt, lemon and olive oil to more complex dishes such as sardines’ meatballs in tomato sauce.
Frsh sardines are famous for their rich flavor and nutritional benefits. I recommend eating sardines very often as they are considered one of the healthiest fish.
INGREDIENTS:
1-pound sardines
1/2 lemon juice
1/2-teaspoon cumin
1/2-teaspoon ginger
3-tablepoon olive oil
1/2-teaspoon salt
½ teaspoon coriander
1/2 teaspoon freshly ground pepper
1/2-teaspoon paprika
1/2-teaspoon cayenne pepper
1/3 bunch parsley chopped
1/3 bunch cilantro chopped
3 cloves of garlic chopped
STEPS:
Preheat the oven to 375 degree F.
Clean and scale the sardines under cold water dry and let dry.
Combine all the ingredients in a bowl and whisk very well.
Arrange the sardines in single layer in deep dish season with salt and pepper and drizzle with olive oil and pour the chermoula over making sure to rub both sides of the fish then let marinated for about one hour in the fridge.
Lay the sardine in a roasting pan and cook for about 15 minutes.
