You can not go wrong with Beer and Sausages either combined together in the cooking or as a pair of the final dish, no doubt they are the perfect pairing.
No matter how you cook the sausages, they all end up a filling and a delicious meal. So in this recipe, I preferred searing and simmering them in beer for extra flavor, adding the onion and the sweet peppers contribute the freshness to the dish.
INGREDIENTS:
2 large chicken or sweet Italian sausages
1/2 cup of Beer
1/2 each of sliced onion, red bell pepper, green pepper
1 red chili pepper
1 chopped clove of Garlic
2 tablespoons olive oil
1 bay leaf
Kosher salt and freshly ground pepper
Chopped Parsley (optional)
STEPS:
Warm the 1/2 of the olive oil in cast-iron pan until hot but not smoking add the sausages and sear all the sides by turning occasionally until browned about 4 to 5 minutes.
Remove the sausages aside, In the same cast-iron pan add the rest of olive oil, the chopped garlic, the sliced onion, the sliced peppers and the red chili pepper, then season with salt and the freshly ground pepper. Stir occasionally until soft for about 5 minutes.
Finally, add the sausages back to the pan add the beer and cook for about 7 minutes stirring occasionally till the beer evaporated.
Serve hot and garnish with chopped parsley.
