SEARED BRANZINO FILLETS WITH BELL PEPPERS

Searing is one of the easiest ways to prepare your Branzino. It is the perfect way to cut your cooking time down to few minutes; you will be amazed with the tender and extra crispy skin fillets.

INGREDIENTS:

1 Branzino cleaned, scaled and cut to 2 fillets

2-tablespoon olive oil

1 clove of garlic crushed

1 sprig of thyme

Salt and freshly ground pepper to taste

For the sweet multicolor bell pepper side:

1/2 each red bell pepper, yellow bell pepper, orange bell pepper

1/2 medium red onion diced

1 clove of chopped garlic

1 bay leaf

STEPS:

Season the Branzino fillets with salt and pepper and olive oil.
Heat oil in sautéed pan; add the crushed garlic and the sprig of thyme. Sear the fish the skin down for few minutes on each side until golden brown. Remove the garlic and the thyme from the sautéed pan.

To prepare the sweet multicolor bell peppers side, heat oil in pan over medium heat, add the diced onion and cook for few minutes until translucent. Add the chopped garlic and cook for few additional minutes then add the diced bell peppers, bay leaf and cook stirring occasionally until soft about 7 minutes. Seasoning to taste.

Serve hot with a drizzle of olive oil.
