SPANISH MACKEREL AL CARTOCCIO

I had very limited choices while I was shopping for fish this Saturday; the place was super busy as we are in the middle of the holiday’s season. The only choice I have, or the only fresh fish that was appealing in the display was the Spanish mackerel, I picked two and headed straight home.

The Spanish mackerel was really delicious, It turns out it was the catch of I mean the choice of the day.

INGREDIENTS:

1 Spanish Mackerel

1 lemon thinly sliced

Thyme, rosemary, bay leaf

1 clove of garlic thinly sliced

Olive oil

Salt/Fresh ground pepper to taste

STEPS:

Preheat the oven 375 degree

Season the fish inside and out, place the sliced lemon, the thyme, the rosemary, shaved garlic and the bay leaf inside. Drizzle with olive oil

Place in the aluminum foil, close very well and cook for about 15 minutes (the cooking time depends on the size of the fish, make sure not to overcook it, you can open the foil to check the fish but make sure to close it to finish the cooking).
