SUMMER NIÇOISE SALAD

This salad is a perfect main course for a summer evening.

INGREDIENTS:

1 cup cooked red potatoes

1 cup blanched green peas

1/2 butter lettuce

1 thinly slice radish

1 cup cherry tomato cut in halves

1/4 cup Niçoise olive

4 anchovies 

2 hardboiled egg cut in quarters

Thinly slice red onion

Fresh chives (optional)

Oven cooked bacon (optional) 

Dijon Mustard Dressing:

2 tablespoon extra virgin olive oil

1 tablespoon of dijon mustard

Salt and freshly ground pepper to taste 

STEPS:

For the dressing:

Combine the ingredients and mix until well blended.

Line serving plate with lettuce leaves and arrange the rest of the ingredients and top with dressing.
