Celebrate the flavors of winter with this crisp and refreshing Winter Apple Salad! Packed with sweet, juicy apples, crunchy nuts, tart cranberry, and a tangy homemade dressing, this salad is the perfect balance of textures and tastes. Whether served as a side dish for a holiday gathering or enjoyed as a light lunch, this seasonal favorite brings a delicious taste of fall to your table.
ROASTED WALNUT OIL VINAIGRETTE
INGREDIENTS:
1/3 cup Roasted Walnut Oil
1 tbsp red wine vinegar
2 teaspoons honey
Salt and freshly ground pepper to taste
STEPS:
Combine all of the ingredients in a glass jar, seal the lid, and shake until emulsified.
Serve over fall Salad
When stored in refrigerator, allow to come to room temperature and shake well before using.
APPLE WINTER SALAD
INGREDIENTS:
1/2 medium fennel bulb thinly sliced
1/2 large apple cored and thinly sliced
1/4 cup pomegranate seeds
1 tablespoon crumbled walnuts
1/2 small red onion thinly sliced
2 Oz. fresh goat cheese (optional)
1 tablespoon dried cranberry
Fresh Celery leaves and fennel fronds for garnish
STEPS:
Add the apple, fennel, red onion to the vinaigrette and toss to coat evenly. Arrange on plates and sprinkle with the goat cheese, pomegranate seeds, cranberry and crumbled walnuts.
Garnish with the celery leaves and fennel fronds.
Serve immediately.
