SKIP THE TURKEY THIS THANKSGIVING AND MAKE THIS SUPER DELICIOUS ORGANIC CHICKEN
I like roasting chicken, it is very easy; all you need is few herbs and some seasonings and you are done. The best part is while the chicken is roasting; I got enough time to make as many sides as I want.
INGREDIENTS:
2-pound organic chicken
Olive oil
Garlic
Fresh rosemary
Kosher salt /fresh ground pepper
1 lemon cut to quarters (optional)
STEPS:
I normally remove the chicken from the refrigerator one hour before cooking.
Preheat the oven to 375 degree.
Season the chicken inside and out with kosher salt and fresh-ground pepper.
Blend the rosemary and the garlic with the olive oil until smooth paste.
Start rubbing every part of the chicken including the inside.
I often stuff the chicken with 1 lemon cut to quarters, crushed garlic, and whatever herbs sprigs I have available such as sage, rosemary or thyme.
Cook for about 1:40 minutes (cooking time is depending on how big/fresh is the chicken), but make sure that internal temperature registers 165 degree in thickest part of the chicken.
